Herb Chicken Tailgate Kabob

Grab the skewers and the grill! These tasty tailgating kabobs are surefire hits for the pre-game cookout. If you're tailgating at home or homegating, you can simply have these ready, grill them on the spot, or keep them ready in the oven.

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 medium white onion or pearl onions
  • 1 red bell pepper
  • 2 tablespoons olive oil
  • Juice from 1 medium lemon
  • 2 teaspoons dill
  • 1½ teaspoons kosher salt
  • ½ teaspoon freshly ground pepper
  • Wooden skewers
  • Instructions:

    1. If using wooden skewers, soak them in water while the chicken is marinating.
    2. Cut the chicken breast into 1- 1½ inch cubes and transfer to a bowl.
    3. Add the olive oil and lemon juice dill, salt, and pepper to the chicken – mix well and marinate the chicken the refrigerator while you prep the vegetables.
    4. Cut the bell pepper and onion into 1 inch cubes and set aside.
    5. Heat grill or grill pan on medium-high heat.
    6. Drain marinade from the chicken and discard. Thread the chicken and vegetables onto the skewers in a colorful rainbow pattern.
    7. Grease grill with olive oil to avoid sticking.
    8. Place the chicken kabobs on the grill and cook for 7-10 minutes, turning the chicken over half way though the process. Chicken is done when a meat thermometer inserted in the center reaches 165°F.
    9. Serve with lemon wedge and fresh chopped dill on top and pair with a glass of Bota Breeze Pinot Grigio to complement the flavors.

    Portobello Mushroom Burger with Mint Sauce

    Looking for a tasty vegetarian option for the grill? Score a touchdown with these Portobello Mushroom Burgers. Paired with a creamy mint sauce, it is a combination that pleases both non-meat and meat eaters alike.

    Ingredients:

  • 4 large portobello mushrooms
  • Extra-virgin olive oil, for drizzling
  • Sea salt and freshly ground black pepper
    Sauce:
  • 1 cup Greek yogurt
  • 1/2 cup finely chopped mint leaves
  • 2 medium cloves garlic, minced (about 2 teaspoons)
  • 1 tablespoon fresh juice from 1 lemon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • Kosher salt and freshly ground black pepper
  • For Serving
  • 4 hamburger buns, warmed or toasted
  • Fresh Spinach
  • Sliced tomato
  • liced red onion

     

  • Instructions:

    1. Prepare the Sauce: Place yogurt, mint, garlic, lemon juice, cumin, and cayenne in a small bowl and stir to combine. Season with salt and pepper to taste. Let sit for 30 minutes in covered container in refrigerator.
    2. Prepare the mushrooms by removing the stems and cleaning the caps with a damp cloth or paper towel. Place the mushrooms in a rimmed plate and drizzle with olive oil, salt, and pepper.
    3. Use your hands to help coat the mushrooms on both sides.
    4. Heat a grill or grill pan over medium heat. Place the mushrooms, gill side up onto the grill pan. Cook 5 to 7 minutes per side, or until mushrooms are tender.
    5. Place the mushrooms onto the buns and top with vegetables such as sliced onions, tomato and fresh spinach. Burgers can be presented with yogurt mint sauce on top or on the side and paired with a glass of Bota Box Nighthawk Bold Cabernet Sauvignon.

    Ingredients:

    • 4 oz Bota Box RedVolution Red Wine Blend
    • 2 oz Pineapple Juice
    • 1 oz Fresh Orange Juice
    • 1 tbsp Sugar

    GARNISH

    • Lemon Wheel
    • Grapes

    Instructions:

    1. Add to a bucket glass pineapple juice, sugar, and orange juice.
    2. Add a big ice cube.
    3. Gently pour Bota Box RedVolution to fill almost to top.
    4. Garnish with a lemon wheel and a few grapes.
